Egg Mayo Salad – Sandwich | Egg Sandwich

Cooking is an art, where you play with the ingredient to vary the taste. It’s amazing how twisting every bit of spice produces a wide range of recipes. Sometimes the weather influence cooking, sometimes the mood and sometimes in order to lure your near or dear ones you play with the flavors.

While cooking for this dish I was in the United States and it was my first snow. Being in the coastal Indian climate, which is hot and humid, snow was a surprise and witnessing it was a dream come true. The snowy white morning encouraged me to have a recipe which kept me comfortable and matched the white mood.

That very thought tossed my eyes to three ingredients in the fridge: Bread, Egg and mayonnaise sauce. My husband is a health freak (though not in actual, but pretends to be one) always prefers salads. That put me under pressure to cook a salad. And me being a breakfast buff wanted something heavy to wipe out my entire nights long fast. So, the solution for that was to prepare a salad for him and stuff it with the bread to make a sandwich for my ever growling stomach.

So the recipe and mood goes as below:

Ingredients:

  1. Eggs (3-4)
  2. Mayo Sauce – 2-3 tbsp
  3. Onion – 1 middle size, diced
  4. Green chilies – 2-3 pieces
  5. Coriander leaves – Finely chopped
  6. Bread – 3 pieces(white/brown)
  7. Salt – According to taste
  8. Black Pepper Powder – 1tsp

Steps of Preparation:


   Preparation Time: 15 mins
   Cooking Time : 30 mins

  1. Boil the eggs for 20-25 mins in the pan till it’s hard boiled.
  2. Peel off the skin and cut the eggs into medium cubes along with the yolk firmly attached with the egg white.
  3. In a bowl bring the mayonnaise sauce, diced onions, finely chopped green chilies, salt, pepper powder and mix it properly and uniformly.
  4. Add the cut egg pieces to the mixture.
  5. Garnish the salad mix with the finely chopped coriander leaves. You can place this salad mix for the starter buffet in the dinner or lunch.
  6. After the mix is done, cut the bread pieces to two diagonally n stuff to the salad mix.
  7. Place the sandwich in the hot pan and grill it for 2 mins.
