How to make an Omelette stuffed with Mushroom and Spinach with a Healthy twist?
This Sunday had something special in it. It was hubby dear’s first Father’s day and my baby’s fourth month birthday. Both the occasion called me for a special treat, but with a small baby … ahhh !! No !! That was the answer we both had for each other. The usual daily ritual had started with feeding the baby, jumping around him, doing the giggles and blabbers so that he catches up to our tune soon. Hubby dear kept on insisting me to order something exotic for the breakfast, so that we have a grand feast at our cozy home.
The internet age has redefined human lifestyle. We’ve loads of options, apps, and coupons. We now sit at home and enjoy the stagnant life. Ordering online grocery, food has become the norm for many. In this kind of virtual life we are missing out on the many charms of life.

All these thoughts were rumbling around my mind, which made me realize why not prepare something exotic and healthy for the home itself. I opened the Pandora Box of my kitchen, which had so much stuff to work on. My husband is a continental food lover and is satisfied with the subtle flavors. That made me look at the classic spinach and mushroom saute-ed in white sauce and stuffed within Omelette in a French style.
The biggest task was to make the white sauce. I found my kitchen lacking the ready made one. Preparing a classic flour and egg based sauce was going to be tedious and a bit unhealthy one. Even though I wanted to make it cheesy, I had to avoid the flour base. I was reminded of a Vicky Ratnani show where he had used cauliflower base instead. That led me for my white sauce with cauliflower and Italian, garlic seasoning. It was heavenly, cause it had aroma, taste and health all in one package. I really loved the sauce. And to give the recipe a healthier twist, I used Italian seasoned Masala Oats for the Omelette. The taste was yummilicious. It made the Omelette more filling and sumptuous.
Here goes the recipe:
Ingredients:
For the Sauce:
- Cauliflower – 3-4 florets
- Olive Oil – 2 tsp
- Garlic – 2-3 cloves, minced and crushed
- Basil Leaves – 2 tsp finely chopped
- 1 small cube cheese
- Salt as per taste
For the Stuffing of Spinach and Mushroom:
- Mushroom – 200 gms
- Spinach – 1 whole bunch
- Olive Oil – 4 tsp
- Salt as per taste
For the Omelette:
- Eggs – 4
- Italian flavored Oats – 20 gms (if not available you can use the plain oats and flavor it with the Italian seasoning)
Steps of Preparation:
Sauce:
- In a wide bottomed vessel, boil the cauliflower florets and after it is cooked, let it cool to the normal temperature.
- Puree the boiled cauliflower in a blender to a thick watery consistency.
- Heat a pan, add 2 tsp of Olive Oil.
- Once the Oil is hot, add the minced garlic and saute it.
- Allow the garlic flavor to get embedded in the oil.
- Then add the pureed cauliflower and let it cook for 2-3 mins.
- Once the cauliflower puree starts to simmer, add the chopped basil and some Italian seasoning or fresh oreganos.
- When the sauce looks flavorful, just grate the cheese to increase the aroma and texture of the sauce.
Here comes the white cauliflower sauce:
Filling:
- Wash the mushrooms and pat it dry. Chop the mushrooms into medium sized cubes.
- Rinse the spinach in water and pat dry. Chop it finely.
- Heat a pan, add 2 tsp of Olive Oil.
- Add the cubed mushrooms and fry till all the water dries out and mushroom is cooked.
- After it is cooked, take it from the flame and keep it aside.
- In the same pan, add 2tsp of Olive oil.
- Add the minced garlic and finely chopped basil and saute it.
- Add the Italian seasoning and cook it for few mins.
- To the flavorful seasoning, add the finely chopped spinach.
- After the water oozes out of the spinach and it is cooked, add the cooked mushrooms.
- To the filling, add the cauliflower sauce and the saute it again.
- Add some more cheese to make it more cheesy and yummy.
Here goes the yummy cheesy filling:
Omelette:
- Take 4 eggs and break it in a wide bottom bowl, add half cup of Italian flavored Oats or else add the oatmeal and some Italian seasoning.
- Beat the eggs and oats together, season the batter with salt according to the taste. Don’t over do the salt as the filling already contains salt.
- Heat a pan, add 1 tbsp of Olive Oil to it. Add half of the omelette patter to the pan and cook the Omelette. Once the side facing downwards is golden brown, flip the Omelette (if you prefer the raw version of eggs, you can stuff it now).
- After flipping the Omelette, add the spinach and mushroom filling to half of the Omelette. Fold it once the other side looks cooked.
Enjoy the stuffed nutritious Omelette. It’s not only a treat to the taste buds, it is packed with nutrients and health as well.
